Italian Panna Cotta with Cherries
Panna Cotta, which means “cooked cream” in Italian is quite a famous dessert and yet it has only been around in Italian cookbooks since the 1960’s. And just only became fashionably delicious in the States in the 1990’s. It is often served with fruits or berries or a sauce like caramel or chocolate. It is definitely worth a try if you have never eaten it before…and it is definitely worth a try if you have never made it before! Like me :)
I must confess that this was the first time I had ever made or every even tried panna cotta. Of course I loved it….just like I knew I would. Plus I wanted something sweet this week to soften the sour taste the world keeps leaving in my mouth. You should try it too!
For how gorgeous and fancy this delicate dessert looks, it’s not as difficult as one might think, which is another great reason to give it a try. It’s gluten free which makes it a nice alternative to cake for a special day and since it is light and can be dressed with fresh fruits, it is a lovely addition to a summer get together. And (I always like this one) it can be made ahead of time and simply topped with fruit when ready to serve. Enjoy!
The recipe
Italian Panna Cotta with cherries
•2 1/4 cups heavy cream
•1/4 cup sugar
•3 Tbsp water
•1 packet gelatin (2 1/4 tsp)
•1 1/2 tsp vanilla extract
•Cherries in syrup*
1. Place water in a small bowl and sprinkle a single layer of gelatin over the surface. Let sit for 5-10 min.
2. Meanwhile, in a medium saucepan heat heavy cream and sugar until boiling and sugar has dissolved. Remove from heat, and stir in vanilla.
3. Add gelatin-water mix and whisk immediately to combine. Pour into 4 ramekins and refrigerate for 4 hours.*
5. To invert the panna cotta, place ramekins in hot water for 10 seconds. Invert over plate and gently shake loose. Top with cherries and serve.
* I had this lovely jar of Italian cherries in syrup that I wanted to use but you could use fresh berries or a homemade or store bought pie filling. It could be topped with a nice marmalade too.
* Panna cotta can be chilled in any dish and can be served without inverting. Simply top with cherries.
