Zucchini Fritters
This is one of my favorite zucchini recipe…especially when you have an abundance of zucchini coming from the garden!! They are delicious, healthy, and something that the whole family can enjoy!
A couple of large garden zucchini are usually enough for this recipe….or if you are using smaller ones you may need about four. If using very large zucchini from the garden make sure to take the seeds out of the center if they have become large and peel them if the skin has started to become too woody.
Zucchini fritters
THE INGREDIENTS -
4 cups shredded zucchini
2/3 cup all-purpose flour (I’ve made this using 1 to 1 gluten free flour too)
2 large eggs, lightly beaten
1/4 cup diced up chives
1/4 cup freshly grated Parmesan or Pecorino Cheese
1 clove Garlic minced
Fresh basil and oregano minced
Salt & pepper
Olive oil
Sour cream, for serving (optional)
THE PREPARATION -
Place the shredded zucchini in a colander over a bowl. Sprinkle lightly with salt and let it sit for 15 minutes. Using your hands, squeeze out as much liquid from the zucchini as possible and then transfer to a large bowl. At this point I like to taste the zucchini to see how much salt I need to add in the next step.
Add the flour, eggs, diced chives, grated cheese, garlic, fresh herbs, and salt & pepper. Stir well to combine all the ingredients.
In a large sauté pan over medium heat add in some olive oil. When the oil is heated scoop in the zucchini mixture and flatten lightly with a spoon into a patty…or use your hands to make a patty and then place in the pan. Sprinkle with additional salt, and cook for 2 to 3 minutes, flip the fritters and cook an additional 3-5 minutes or until golden brown and cooked throughout. Transfer the fritters to paper towel-lined pan with a lid to keep them warm. Repeat this process with the remaining zucchini mixture.
Serve the zucchini fritters topped with sour cream and extra diced chives (if desired).
