No-Bake Nutella Cookies
These chewy chocolatey fantastically delicious cookies are one of only a handful of recipes I remember making regularly with my mom as a teenager. They are almost instant gratification (definitely one of the reasons we loved them) as they require no baking and only a small amount of time on the stovetop. Because of how quickly they start to harden up after cooking there is hardly any waiting once they are hot. If you are willing to take the chance of scorching your mouth you can eat this hot bubbling chocolate goodness with a spoon right out of the pan :) We used peanut butter in the version I had as a child but I thought it would be a bit more fun here to put an Italian spin on them with some Nutella!
No-bake Nutella Cookies recipe
Yields approximately 24 cookies
ingredients
½ cup butter
½ cup milk
1 1/4 cup granulated sugar
6 Tablespoons cocoa powder
2 teaspoons vanilla extract
3/4 cup Nutella
3 cups quick cooking oats*
In a saucepan large enough to hold all the ingredients, combine butter, milk, sugar, and cocoa powder, heat over medium heat.
Bring to a rolling boil and let boil for one minute. Remove your saucepan from the heat.
Add Nutella and vanilla extract to hot mixture and stir until combined. Add oats and stir until completely combined.
4. Drop by spoonfuls onto parchment paper lined baking sheets. Allow to rest at room temperature until set, about 30 minutes or if you just can’t wait put them in the fridge to set up quicker. Or don’t wait at all and enjoy while they are warm and deliciously gooey!

*I used regular oats in the photos because I didn’t feel like running back to the store. They can be used but the texture is better with quick cooking oats!
