Gluten Free (or regular) Mixed Fruit Crisp
Last week I shared with you a Gluten Free Almond & Plum Cake. This week I’m staying with the theme of fruity gluten free treats so I decided to share with you a Gluten Free Mixed Fruit Crisp. A crisp is one of my favorite desserts. I love that it fits into anytime of the year and I love that you can customize it with the fruits that you have available. This recipe works well with frozen fruit too which is great for when ripe fruit isn’t readily available. If you don’t need this dessert to be gluten free, you can substitute regular flour :)
THE FILLING INGREDIENTS
6 to 7 cups mixed berries and other fruit such as pear, plums or peaches*
1/3 - 1/2 cup sugar (adjust depending on the sweetness of your fruit)
3 tablespoons gluten free 1 to 1 baking flour (I use Bob’s Red Mill)
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
THE CRUMBLE TOPPING INGREDIENTS
3/4 cup gluten free 1 to 1 baking flour
3/4 cup brown sugar
3/4 cup old fashioned oats
1/2 tsp cinnamon
1/2 teaspoon salt
1/2 cup unsalted cold butter, cut into cubes
THE DIRECTIONS
Preheat the oven to 350 degrees
For the filling - In a bowl, combine your mixed fruits with the sugar, flour, cinnamon and salt, and toss to coat. Add the fruit mixture to a glass 9 x 13 baking dish.
For the topping - In a bowl, combine the flour, brown sugar, oats, cinnamon and salt. Next, cut in the butter with a pastry cutter, or fork until you have a nice crumbly texture. Spread evenly over the fruit and bake until crisp and golden brown 25 - 30 minutes.
Allow the crisp to cool for about 20 minutes before serving. Serve alone or along side some lovely vanilla gelato.
*If using frozen fruit - thaw and let drain in a colander before mixing with the other ingredients.
