Herbed Tomato & Zucchini Summer Salad
Salads are a must during summer aren’t they?! Whether we don’t want to cook or we are just craving lighter meals, salads are always a part of our summer lunches and dinners. This herbed tomato and zucchini salad has all the best summer goodies from the garden wrapped into one! I make this every year when the garden is abundant with tomatoes, zucchini and basil or when I want a change from the classic lettuce based salad! It is flavorful, colorful, and absolutely delicious! It will be a hit at your next lunch, dinner or get together with friends!
THe recipe -
HERBED TOMATO & ZUCCHINI SALAD
1 lb tomatoes - cherry or other small tomato
1 Medium zucchini - I used about 2/3 of the zucchini pictured
2/3 cup chopped fresh herbs combined
Chives
Italian parsley
Basil
1/4 - 1/2 cup Extra Virgin olive oil
2 cloves garlic - minced
Fresh squeezed lemon juice from 1 to 2 small lemons
Salt and crushed pepper to taste
Lemon slices and fresh herbs to garnish
herbed tomato & zucchini salad preparation -
Cut tomatoes and zucchini and place in a bowl. Chop the herbs and add to the tomatoes and zucchini, toss together.
Combine 1/4 cup olive oil, the juice from one lemon (start with 2-3 Tbsp and then add more if desired,) minced garlic, salt, pepper. Whisk together and pour over your tomatoes and zucchini.
Garnish with extra lemon slices, a drizzle of olive oil, and salt/pepper to taste.
Serve right away or let sit for 30 to 45 min to marinate a bit. Enjoy!
