Gluten Free No-Bake Energy Bites

These fabulous little energy bites are perfect for those busy days when you just need a quick bite of something to give you a boost. They are also a great addition to a snack for kids, or added to a to-go lunch. Your whole family is going to love them!!

This recipe is fun because you can add to it or take away from it. If the mixture is a little too dry you can add a touch more of peanut butter, honey, coconut oil or simply some water. If it’s too wet add some more oats or something new like sunflower or pumpkin seeds. There are so many possibilities!

No-Bake Energy Bites

THE INGREDIANTS -

  • 1 1/4 cup gluten free rolled oats

  • 1/2 cup chocolate chips

  • 1/2 cup ground flaxseed meal

  • 3/4 cup flaked unsweetened coconut

  • 1/2 cup peanut butter or other nut butter (creamy, crunchy, salted or unsalted are all ok)

  • 1/3 cup honey

  • 1 tsp vanilla extract - make my homemade vanilla extract >>HERE<<

THE PREPARATION -

  1. Mix all ingredients together in a bowl. Roll into approx. 1 in balls (a little water or oil on the hands helps the balls not stick to your hands) Place on a baking sheet and freeze until set - 10 to 20 minutes.

    Makes approx. 24 to 30
