Budino al Cioccolato con Latte di Mandorla - Chocolate Pudding with Almond Milk
Chocolate has always been my go to sweet treat. I have a little piece most days. It’s delicate, rich and relaxing…and it tastes divine! I can’t imagine a world without this dark delicious goodness!
Chocolate pudding is a delightful dessert for the whole family. It’s easy to make. It’s elegant and delicious. It can be made gluten free or dairy free in the case of the recipe below. And it can easily be made a day or two ahead of when you want to serve it. Add in some fresh berries and you have a perfect sweet indulgent dessert.

Chocolate pudding
THE INGREDIENTS -
1 1/2 cups Almond milk
1/2 cup sugar
1/3 cocoa powder - sifted
3 Tbsp cornstarch + 2 Tbsp water
1 tsp Vanilla Extract
1 tsp unsalted butter - if desired
Fresh Fruit - if desired
THE PREPARATION -
In a small saucepan, whisk together the sugar and cocoa powder. In a separate bowl whisk the cornstarch and water together, until no clumps remain.
Into the flour mixture whisk in the milk and then the cornstarch and water mixture.
Place the saucepan over medium heat. Stir constantly until mixture comes to a simmer and starts to thicken, about 5 minutes.
Remove the saucepan from the heat and stir in the vanilla and butter (if using). Stir until combined.
Pour into into ramekins, cups or any desired dish and refrigerate until chilled.
Serve as is or with fresh fruit or whipped cream.
